In the last year and a half I have lost over 100 pounds. I have done so by diet and exercise. I don’t often cheat, but when I do I look for something chocolate. As today was Mother’s Day I decided it would be a great “cheat day”. I enjoyed a late lunch with family and then came home looking for a sweet treat. Because I do not keep any sweets in the house I decided to make some brownies. While getting out the ingredients I remembered I had discovered Stoneridge Orchards Montmorency Cherries at our local Hannaford Supermarket. I thought I would try throwing a few in the pan and see how they were. The end result were so good I have to share.
Michelle’s Chewy Chocolate Cherry Surprise Brownies
1/2 cup cocoa
1/2 cup of butter
1 cup Sugar
1/4 cup flour
1 teaspoon Vanilla
Pinch of Salt
12 or so Stoneridge Orchards Montmorency Cherries
Preheat oven to 325. Place butter in a pan on low heat until melted. Add the cocoa and stir until blended. Remove from heat and allow to cool for about 5 minutes. Slowly whisk in the eggs.
While waiting for the Cocoa and butter to cool Mix dry ingredients in a bowl. Add Wet mixture and Vanilla and mix until moistened. Greece bottom only of a 8×8 square pan and place cherries in the mixture. I used a “brownie pan” and doubled the recipe because we fight over the edge pieces.
Cook for about 30 to 35 minutes. The end results are nothing short of amazing.
